What you need

oz butter beans

oz canned diced tomatoes

tbsp tomato paste

tsp kosher salt

oz sweet corn

tsp black pepper

cup low-sodium broth

lemon

tsp smoked paprika

tbsp parsley

carrot
tbsp olive oil

celery stalk

Instructions
0 In a large saucepan, heat the olive oil over medium heat. Sauté the onions, carrots and celery until they start to soften, about 4 minutes. 1 Add the tomato paste, garlic, cumin, smoked paprika, salt and pepper, cooking until fragrant, about 1-2 minutes. 2 Add the beans, corn, diced tomatoes and vegetable broth. Bring the soup to a boil and lower the heat to simmer for 15-20 minutes until the soup reduces slightly. 3 Squeeze in the lemon juice and stir in the parsley. 4 Divide into bowls and top with additional parsley as desired.View original recipe
